Ingredients
Jaeger Schnitzel
  • 6 cutlet Boneless Pork Chops thin 1/4" cuts work best
  • 1 1/2 cup Flour spread on 1 plate
  • 4 eggs scrambled in mixing bowl
  • 3 cup bread crumbs spread on 2nd plate
Mushroom Gravy
  • 1 pound Sliced Mushrooms
  • 2-3 slices bacon
  • 1 Small Onion finely chopped
  • 1/2 cup Vegetable Broth
  • 1/2 cup Cream
  • 1/2 teaspoon Dried Thyme
  • 1 bunch Parsley finely chopped
  • Milk as needed

Instructions
  1. Here you will bread the pork cutlets. In the 1st plate put flour, then have the bowl with eggs and a 2nd plate with the bread crumbs. Use a fork as it gets a bit sticky... 1 - dip and cover the cutlet with flour 2 - dip the cutlet in the eggs, covering completely 3 - now transfer to the bread crumb plate and cover
  2. I use Virgin Olive Oil or Avocado oil for this...just enough to cover the flat portion of disc.
  3. Once your temp is good (test with a little piece of breading)
  4. Working on side two...these are pretty big pork steaks
  5. Turn as needed
  6. Remove and place on plate with paper towels
  7. Round 3.... with more waiting on the side... This is the 24" disc so you can see how large these pork pieces are!!
  8. Add a little IPA (for the cook) ;>)
Mushroom Gravy
  1. Finished Product = = = For the Sauce - Adjust as needed for amount cooked 1 lb Mushrooms, washed and cut into bite-size slices 2-3 slices Bacon, chopped into small pieces (I did not add this..) 1 small Onion, finely chopped 1/2 cup Vegetable Broth 1/2 cup Cream 1/2 teaspoon dry Thyme A small bunch Parseley, finely chopped A little extra milk as needed Also good with Green Beans and Kale...
