This is our twist and is a spicy and delicious Mexican meat and rice dish with outstanding flavors. The recipe is quick and easy enough to make for a very large group. We used raw/fresh Hatch Green Chile but you can substitute Poblano's if you cannot find the chile. Depending on the chile you select this can be mild to HOT based on your taste buds!! The recipe below was enough for 8 hungry couples so adjust as needed.

Ingredients
Mexican Rice
  • 2 pounds lean ground turkey You can substitute with beef or pork
  • 2 Bunch Cilantro finely chopped
  • 1 onion chopped
  • 5 Hatch Green Chile Raw / seeds removed
  • 1 Black Pepper Season to taste
  • 1 garlic Season to taste
  • 1 Oregano Leaves Season to taste
  • 1 Hummus Season to taste
  • 1 Pure Sea Salt Season to taste
  • 1 Basil Leaf Season to taste
Rice Mixture
  • 3 cups Cooked Wild Black Rice
  • 1 can Black Beans all liquid drained and rinsed

Instructions
  1. Here are our dry ingredients - You can season the meat to your desired taste
  2. Here are our raw ingredients - Hatch Green Chile, Onion and Cilantro
  3. Start off by browning your chosen meat (for this we used ground turkey)
  4. Once thoroughly browned we added our seasoning
  5. Once seasoned to your taste add the Hatch Green Chile and Onions only (the cilantro is the last thing you add). Cook over low heat until onions are almost translucent and green chile is starting to get soft.
  6. Now add the prepared rice and black bean mix
  7. Mix thoroughly on low heat
  8. Up close image

  10. Mix well
  11. Serve with corn
